1 pie crust
3/4 pound sausage cooked and crumbled
1 cup Colby Jack cheese
6 large eggs
1 4oz can diced green chilis
1/2 cup mayonnaise
1/2 cup sour cream
1/4 cup fresh cilantro leaves
2 teaspoon mexican spice blend**

Preheat oven to 350
Press dough into 9 in deep dish glass pie pan
crimp to form edge
With a fork, prick crust every 2 inches
Bake 10 minutes or until light brown.

In a bowl, toss the crumbled cooked sausage
with the cheese and spread evenly in baked pie crust
Lightly beat the eggs and stir in undrained green chilis, mayonnaise, sour cream, cilantro and spices.
Pour over sausage and cheese

Bake 40 to 45 minutes or until center browns and puffs.

Cool on a rack 10 min. Cut into wedges.

*Spice blend:
1/2 cup chili powder
1/4 cup Hungarian sweet paprika
1 Tablespoon ground cumin
1-1/2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon ground dried chipotle chile pepper
2 teaspoons dried oregano leaves
1 teaspoon salt

Use two teas for this recipe and store covered, the rest.


Good with cowboy potatoes..Look under side dishes.
