2-3 rack of ribs or pork tenderloin, rubbed with pepper and rosemary

Sauce
1 medium onion, minced
5 clove garlic, minced
1/4 cup oil
2 cups cider vinegar
2/3 cup ketchup
1/4 cup Louisiana hot sauce
3/4 cup packed brown sugar
1/2 cup molasses
1/4 cup maple syrup

Saute onion and garlic in oil until tender. Add remaining ingredients and simmer for 1 hour.

Brown ribs in olive oil in a large pot (not aluminum). Add 2/3 of the sauce to ribs and bake at 250 for 3-4 hours. Boil down remainder of sauce for dipping.
