1/2 cup sour cream
2 cups heavy cream, preferably no ultra pasteurized, at room temperature

Thin the sour cream a little with cream, then pour into the remaining cream. Pour the mixture into a clean glass jar, cover loosely, and let thicken at room temperature. This will take anywhere from 4 to 12 hours, depending on the warmth of the room. Cover the jar tightly and refrigerate. (This will have the consistency of sour cream when thoroughly chilled.)
