4 cups peeled, seeded and diced Roma or plum tomatoes
1 cup diced white onion
2 tsp minced garlic
1/3 cup olive oil
2 tbsp balsamic vinegar
1/2 tsp dried oregano
1 lb lump blue crabmeat, picked over for shells
1 1/2 tsp kosher salt
1/2 tsp cracked black pepper
1/3 cup minced fresh basil
2 baguettes, sliced and toasted
Combine first 7 ingredients in a 4 quart crock pot and cook on LOW for 2 hours. Add next 3 ingredients. Stir gently to mix, being careful not to break up crabmeat lumps. Cook on LOW for 1 hours.
Fold in basil. Serve on toasted baguette slices.
