1 cup whipping cream
8 oz milk chocolate, chopped into 1/2 inch pieces
2 tbsp unsalted butter, room temperature
1 cup ground hazelnuts (approximately 1/2 lb of nuts with skins removed and processed into a paste in a food processor)
1 lb whole hazelnuts, toasted lightly and skins removed
1 lb melted semi-sweet chocolate

Scald cream in a saucepan and pour over chocolate. Beat until smooth and add butter. Beat vigorously to incorporate butter. Beat in ground hazelnuts until mixture is well mixed, light and fluffy. Chill mixture until firm. Scrap spoon or melon-ball cutter across surface of chilled mixture to gather a bit of truffle mixture; then press with fingertips into a 1 inch ball. Place on a cookie sheet and press whole hazelnut into ball. Dip into melted chocolate to coat. Place on waxed paper to set.
