4 tsp butter, divided
2 tbsp dry bread crumbs
6 eggs
1/2 cup milk
1/2 tsp dried basil, hot pepper sauce, salt and pepper, to taste
1/2 cup each green and red bell peppers, cut in short strips
1/4 cup chopped onion
8 oz cooked small shrimp, chopped
1 cup shredded cheddar cheese
Paprika, to taste

Preheat oven to 375. Place 1 tbsp butter in a 9 inch or 11x7 inch baking pan. Melt in the oven, about 3 minutes. Sprinkle bread crumbs evenly over melted butter. Bake until browned, about 4-5 minutes. Beat together eggs, milk, seasonings and hot pepper sauce just until blended. Melt 1 tsp butter in a skillet. Add vegetables. Cook and stir 3 minutes. Add shrimp and egg mixture. Cook, stirring constantly with a wide spatula. When eggs are almost set but still very moist (about the consistency of soft oatmeal), remove from heat and stir in half the cheese. Immediately pour into baking pan.

Sprinkle with remaining cheese and paprika. Bake 10-12 minutes. Cool before cutting into squares. Serve or at room temperature.

NOTE: Can be make the day before. Cool completely, cover with plastic wrap and refrigerate.
