5 lbs chicken wings, cut in half at the joint, wing tips removed
1/3 cup canola oil
1 tsp salt plus more to taste
1/4 tsp cayenne pepper
3-6 tbsp hot sauce
1 cups mayonnaise
1 cup sour cream
2 cups blue cheese, crumbled
2 tbsp white vinegar
1/4 tsp black pepper plus more to taste
1-2 large celery heads, strings removed, ribs cut into 3 inch sticks for serving
Preheat oven to 425. In a large bowl, combine wings, oil, 1 tsp salt, cayenne and hot sauce. Arrange wings in a single layer on 2 large baking sheets. Bake until just done, about 35 minutes. Drain on paper towels.
In a medium bowl, combine remaining ingredients and up to 1 tbsp hot sauce, to taste. Season with salt and pepper. Cover and refrigerate up to 24 hours.
To serve: Serve the wings and dip at room temperature, along with the celery sticks.
NOTE: I like to marinade the wings overnight.
