12 oz cavatelli or other medium sized, shell-shaped pasta, cooked al dente
1 can salmon, drained and flaked, reserve liquid
1 cup milk, or more if needed
1 (1.8 oz) pkg herbed seafood sauce mix or lemon dill sauce mix
1 tbsp butter
1 shallot, finely chopped
4 oz sliced mushrooms and
1 (10 oz) pkg frozen chopped spinach, thawed and squeezed dry
1 tsp lemon juice
Grated parmesan cheese
Salt and pepper, to taste

While pasta is cooking, whisk together milk and reserved salmon liquid to equal 2 cups, adding additional milk if needed, and sauce packet; set aside.

In a large pan, melt butter and add shallot and cook until translucent, about 2 minutes. Add mushrooms and cook, stirring occasionally, until lightly browned, about 5-6 minutes. Add spinach and milk mixture, and reduce heat to low. Cook, stirring occasionally, until sauce is thickened, 3-5 minutes. Add pasta, salmon and lemon juice. Stir and toss until pasta is well coated and heated through, about 1 minute. Sprinkle with parmesan cheese and season with salt and pepper, if needed. Serves 6
