1 cup flour
1/2 tsp baking powder
1/4 tsp salt
1 cup packed brown sugar
5 tbsp butter, softened
1 tsp vanilla extract
1 egg white
3 tbsp pecans, toasted and finely chopped
1/3 cup confectioners sugar, divided
Cooking spray
Combine dry ingredients, stirring with a whisk. Combine sugar and butter in a bowl, beat until light and fluffy. Add vanilla extract and egg white, beat for 1 minute. Stir in dry mixture and nuts. Refrigerate dough for 30 minutes.
Preheat oven to 350. Place 1/4 cup confectioners sugar in a small bowl. With moist hands, shape dough into 30 (1/2 inch) balls. Roll balls in confectioners sugar. Place 2 inches apart on baking sheets coated with cooking spray. Place pans in freezer for 10 minutes. Bake 12 minutes or until cookies are golden. Cool on pans 2 minutes. Remove to wire rack to cool completely. Using a fine sieve, sprinkle remaining confectioners sugar over cookies.
