4 chicken cutlets, flattened out
1 egg, beaten
1/4 cup olive oil
8 thin slices prosciutto ham, chopped
2 diced cherry peppers
1 cup minced onion
2 tbsp minced garlic and shallot
3 diced canned artichoke hearts
1/2 tsp salt and pepper
2 1/2 cups Tostitos spicy quesadilla bite size rounds, coarsely crushed

Saute onion, garlic and shallots in olive oil, approximately 3 minutes. Add artichoke hearts to saute, cook 4 minutes. Add prosciutto to saute and cook on low for 10 minutes in last 2 minutes, add cherry peppers, salt and pepper.

Lay out the four flattened cutlets and spread mixture onto chicken cutlets. Roll up each cutlet with mixture inside and close. Secure roll with toothpicks. Dip rolls in beaten egg. Dredge in crushed chips. Pan fry rolls until golden brown on all sides. Slice rolls into thick wheels and serve. Serves 10
