1 15 oz. jar of Tostitos Smooth and Cheesy flavored dip
1 lb of broccoli
1/2 cup of sour cream divided
1 to 2 cups of white rice
1 stick of butter
9 inch pie pan or casserole dish
salt and pepper to taste
Cooking temp. 350
Preparation (for me) 20 minutes
Bake time (for me) 15-20 minutes
Follow the instructions that are on the rice bag. As for me I dice my broccoli until it is almost fine and has a few chunky pieces. Boil or steam broccoli for 15 to 20 minutes. Or until it is tender. While the rice and broccoli are cooking, in a small bowl add half of the Tostitos dip and half of the sour cream together until it is like a mousse. Set in refrigerator until later. When the rice and broccoli is done, strain it and add to a large mixing bowl. Add the stick of butter, salt, pepper, sour cream, and the remaining cheese dip and mix together. Also add a little of the cheese mousse mixture. When you are done mixing the ingredients add them to your baking dish. Take the rest of the cheese mousse mixture and spread it evenly on the top. Bake for 15-20 minutes or until the cheese is bubbly. Enjoy...in my house this makes about 6 to 8 servings
