2 cups flour
1/2 cup sugar
1 tsp baking powder and baking soda
1/4 tsp Salt and pepper, to taste
1 (8 oz) container lemon yogurt
1 egg
1/4 cup milk and vegetable oil
1 tsp vanilla extract
1 cup fresh or frozen blueberries
1 tbsp grated lemon rind and sugar
Combine dry ingredients in a large bowl; make a well in the center. Stir together yogurt and next 4 ingredients. Add to dry ingredients, stirring just until moistened. Spoon evenly into a muffin pan coated with cooking spray. Sprinkle tops evenly with sugar. Bake at 400 for 18 minutes or until toothpick inserted in center comes out clean.. Remove from pan immediately; cool on a wire rack.
