3 tbsp salt, paprika and brown sugar
1 1/2 tbsp mustard powder and chili powder
1 tbsp lemon pepper, cayenne pepper, tarragon, garlic powder, onion powder and rosemary
1/2 tbsp celery salt
Rub chicken and smoke at 230 to 250 degrees for 2 to 3 hours (for parts), 4 to 6 hours (for whole chicken), or until thigh juices run clear. Breast is done at 160 degrees F internal temperature. Thighs need to read about 175 degrees. Finish with your favorite sauce, if desired.
