SAUTEED POTATOES WITH GARLIC

1 1/2 lbs new red potatoes
Salt and pepper, to taste
2 tbsp olive oil
2 tbsp butter
2 tbsp finely chopped shallots
1 tsp finely minced garlic
2 tbsp finely chopped parsley

Rinse and place potatoes in a pan and cover with water. Cover with salt and bring to a boil until potatoes are tender. Drain thoroughly. Cool. Cut into 1/4 inch thick slices. There should be about 4 1/2 – 5 cups. Heat oil in a skillet and add potatoes, salt and pepper. Let potatoes cook until they start to brown on one side, about 4 minutes. Shake the skillet to toss and redistribute the potatoes. Add butter. Shake and toss potatoes as they continue to cook. When they have cooked for 4 minutes longer, sprinkle with shallots, garlic and parsley. Toss and stir gently to blend. Serve immediately.
