1 cup quick cooking oats, uncooked
1 cup buttermilk
1 egg, beaten
1/2 cup light brown sugar and canola oil
1 cup flour
1 tsp baking powder
1/2 tsp baking soda and salt
1/4 tsp almond and vanilla extracts
1 cup fresh blueberries
1/2 cup coarse sugar

Preheat oven to 400. In a medium bowl, combine oats and buttermilk. Let stand for 30 minutes. Add next 9 ingredients. Mix well. Fold in blueberries. Spoon mixture into greased muffin pans. Sprinkle with coarse sugar. Bake for 18 minutes.
