STUFFED TURKEY BREAST (Crock Pot)

6 oz pkg seasoned stuffing mix
1/4 cup butter, divided
1/2 cup chopped celery
1/4 cup chopped onion
1 whole uncooked turkey breast
Salt and pepper
Cheesecloth
Dry white wine

Prepare stuffing mix according to package directions. Saute celery and onion in 2 tablespoons butter until celery is tender and onion is transparent. Mix celery and onion with stuffing mix.

Cut turkey breast in thick slice, from breastbone to rib cage, leaving slices attached to the bone. Sprinkle with salt and pepper. Soak cheesecloth in wine. Set turkey on cheesecloth.

Spoon stuffing mixture into slits of turkey. Fold one end of cheesecloth over other to cover meat. Place on a metal rack in a crockpot

Cover pot and cook on low for 7-9 hours or until tender. Pour additional wine over turkey during cooking. Remove from pot and take cheesecloth off immediately.

Preheat oven to 400 and bake turkey for 15-20 minutes to brown. Let stand 10 minutes.
