SWEET AND SPICY SHRIMP ON CRISPY TORTILLA ROUNDS

Rounds
4 (8 inch) flour tortillas
1 tbsp butter

Shrimp and Glaze
1 1/2 tbsp honey
1 tsp soy sauce
1 tbsp Dijon mustard
1/4 tsp ground ginger and dried oregano
1/8 tsp red pepper flakes, or to taste
1 clove garlic, minced
1 tbsp green onions, chopped
1 tbsp butter
12 oz salad-sized shrimp

Spread
3 oz cream cheese
1 tbsp minced shallots
1/2 tsp seafood seasoning

Rounds: Cut 3 (3 inch) circles from tortillas, making 12 circle total. Melt butter and brush on both sides of rounds. Bake at 400 for 5-6 minutes or until crispy and light browned. Let cool.

Shrimp and Glaze: Mix first 8 ingredients. Heat a 10 inch skillet and add butter. When butter is melted, add shrimp and stir to heat through, 1-2 minutes. Add glaze mixture and stir shrimp until coated and glaze caramelizes, about 3-5 minutes.

Spread: Mix together.

When shrimp is done, spread 1 tsp cream cheese mixture onto each tortilla round. Top with 1 slightly rounded tbsp shrimp. Garnish with parsley or cilantro.
