1 lb of campanelle pasta
2 tbsp olive oil
1 medium red onion, chopped
1 lb sweet Italian sausage, casings removed
8 oz of mushrooms, chopped
1 red pepper, chopped
1/2 tsp kosher salt
1/4 tsp ground pepper
2 garlic cloves, minced
2 cups baby spinach, rough chopped
3/4 cup white wine
1/2 cup light cream

Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions.

Meanwhile, heat the olive oil in a large skillet over medium high heat. Add the onions and saute for about 2 minutes. Add the sausage and saute for another 5 minutes. Add the mushrooms, red pepper, salt and pepper. Saute for about 15 minutes, until sausage is well browned and the vegetables are very tender. Add the spinach and garlic, then saute for another minute.

Add the white wine and deglaze the pan, scraping any brown bits from the bottom. Allow to reduce for about 5 minutes. Add the cream and heat though.

Mix in the cooked pasta and serve hot.
