Dressing
3 tbsp lime juice
1/4 cup vinegar
2 tbsp cilantro leaves
1 tsp Salt and pepper, to taste
2 tsp sugar
1 1/2 tsp ground cumin
1 1/2 tsp peanut butter
1/3 cup olive oil

Salad
1 head romaine lettuce, shredded
1/2 heat iceberg lettuce, shredded
2 ears of corn, cooked and cut off the cob or 1 cup frozen and defrosted
1 (15 1/2) can black beans, drained and rinsed
1/2 cup shredded carrot
2 green onions, sliced
1/2 cup diced tomato or grape tomatoes, left whole
2 cups shredded jack cheese
2 boneless, skinless chicken breast halves, cooked and shredded (I like them grilled)
Corn chips or fried wonton strips

Dressing: combine first 6 ingredients in a blender and chop until cilantro is finely chopped. Add oil while blender is running. Set dressing aside.

Salad: Mix first 9 ingredients in a bowl. Add dressing and mix well. Garnish with chips.
