1 tbsp olive oil
4 club steaks (about 1 1/2 lbs total)
1 cup finely chopped red onion
2 clove garlic, minced
1/2 cup beef broth
1/2 cup chunky blue cheese dressing
2 oz blue cheese

Heat oil in skillet. Add steaks and cook about 4 minutes per side; remove and keep warm. Add onions and garlic to skillet and saute 3 minutes. Add broth and cook 1 1/2 minutes to reduce. Remove from heat and stir in dressing. Spoon equal amount of sauce, about 1/4 cup, over each steak. Top with crumbled blue cheese.
