TOMATO-BASED BARBECUE SAUCE

2 tbsp ham fat, bacon grease, vegetable oil or butter
1 cup chopped onions
3 tbsp brown sugar
2 tsp dry mustard
3 tbsp Worcestershire sauce
1 cup ketchup
1/4 cup cider vinegar and water
Salt and pepper to taste

Heat the fat in a small saucepan over medium heat. Add the onions and sauté until lightly browned. Add remaining ingredients. Bring to a boil, reduce heat and simmer, uncovered for approximately 5 minutes. Cool before using. (Sauce may be refrigerated for up to 1 week or frozen for several months.) MAKES 1-1/2 CUPS
