3/4 cup freshly squeezed lemon juice and olive oil
2 tsp salt
1 tsp pepper and dried thyme
2 lb boneless chicken breasts, halved and skin removed

Whisk together the lemon juice, olive oil, salt and pepper, and thyme. Pour over the chicken breasts in a glass dish. Cover with plastic and refrigerate for 6 hours or overnight. This can be one in a ziplock baggie as well.

Heat a grill to medium high heat and cook the chicken for about 10 minutes per side, until just cooked through. Cool slightly and cut diagonally in 1/2 inch thick slices. Stick wooden skewers in the pieces and serve.
