2 green onions and tops, sliced
4 large clove garlic, minced
2 tbsp butter
16 oz pepperjack cheese, cubed
2-4 tbsp milk
8 oz chorizo (Mexican spicy sausage) or hamburger seasoned with taco seasoning; browned, drained and crumbled
2 tbsp chopped tomatoes and finely chopped cilantro
16 flour tortillas, warmed 0R Chopped or sliced fresh vegetables and tortilla chips as dippers
Saute onion and garlic in butter until tender, 2-3 minutes. Add cheese, cook, covered, over medium heat until cheese melts, 8-10 minutes, stirring frequently. Stir in milk if to thick. Spoon cheese in a bowl; sprinkle with meat, tomato and cilantro. Spoon about 2 tbsp mixture on each tortilla and rollup for wraps. Serves 8
NOTE: If using as a dip, it may be necessary to add or milk if mixture is too thick.
