2 lbs unpeeled Idaho potatoes, cut into 3/4 inch cubes
1/2 cup chopped onion
1 tbsp butter
1 cup chopped red, green or yellow bell pepper
1 tsp paprika and seasoning salt
1/2 tsp coarsely ground black pepper
Tabasco sauce, to taste
3/4 cup grated Monterey jack and cheddar cheeses
Boil potatoes until soft. Preheat oven to 350. In a large skillet, saute onion in butter until translucent, do not brown. Add pepper and saute until soft. Transfer to a bowl and mix with remaining ingredients except cheese. Put into a greased baking dish and bake until potatoes begin to brown, about 20 minutes. Sprinkle with cheese and return to oven briefly, until cheese melts. Serves 8-10
