3 tbsp. flour
1/2 tsp. salt
1/4 tsp. freshly ground black pepper
4 boneless pork chops, about 6 oz. each
About 3 tbsp. butter
1 tbsp. vegetable oil
1 clove garlic, minced
1/4 tsp. ground cloves, ginger and nutmeg
4 tbsp. peach preserves (may substitute apricot or currant)
In a shallow dish, combine flour, salt and pepper. Dredge pork chops in flour mixture, turning to coat both sides. Set aside.
In a large skillet over medium heat, heat butter and oil until butter has melted. Add garlic and cook until fragrant but not brown, about 2 minutes. Add chops and cook, turning once, until brown on each side and almost cooked through, about 8 minutes total. Sprinkle top of the chops with cloves, ginger and nutmeg and then brush with preserves. Cook until no trace of pink remains, 3 to 5 minutes. Serves 4
