Breakfast Casserole Muffins

- 1 pound bulk breakfast sausage
- 6 eggs
- 1 cup Bisquick baking mix
- 2 cups half and half
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups grated cheese (Cheddar, Mexican blend, Monterey Jack, etc)
Preheat the oven to 350 degrees F. Grease a muffin tin. Brown the sausage in a skillet over medium-high heat. Drain off any excess grease. Divide the sausage between the greased muffin cups. In a bowl, whisk together the eggs, baking mix, half and half, salt, and pepper. Pour the egg mixture over the sausage, filling the muffin cups 3/4ths full. Sprinkle each muffin with some of the grated cheese. Place the muffin tin in the oven and bake at 350 degrees F for 25 minutes or until set. Serve hot. Variation: Add chopped onions, green bell peppers, mushrooms to the sausage mixture while browning. You can also use bacon or ham in place of the sausage.
