Preheat oven to 400 degrees
Ingredients:
1/2 cup fat free buttermilk
(if you do not have buttermilk, add 1 teaspoon vinegar to 1/2 cup skim milk for this recipe)
2 drops of red pepper sauce
1/2 cup corn flakes, crushed
(can put the cornflakes in a zip loc bag and crush them with a rolling pin)
3 tablespoons all purpose flour
1/4 teaspoon salt
1/4 teaspoon black pepper
2 pounds of chicken parts, skin removed.
4 teaspoons oil
Spray a large baking sheet with nonstick spray.
In a flat dish, combine the buttermilk and pepper sauce. ( A dish big enough to put larger pieces of chicken in)
On a sheet of wax paper, combine the cornflakes crumbs, flour, salt, and pepper.
Dip the chicken in the buttermilk and then dredge in the cornflake mixture.coating the chicken completely.
Place chicken on baking sheet and drizzle with the oil.
Bake 30 minutes. Turn the chicken over and bake until done. 15-20 minutes longer. (internal temperature of both white and dark meat should be 165-170)
