Fantastic Low Carb Chocolate-Coconut Mousse

Ingredients:
1 tub Sugar Free Cool Whip
1 box Sugar Free Fat Free Instant Chocolate or Chocolate Fudge Pudding (Jello brand really is best)
1/2 cup Dried Flaked Coconut, unsweetend
Dash Coconut Extract (optional)

Directions:
Thaw the Cool Whip 12 hours before
preparing.

Prepare pudding as directed using fat free milk.

Stir in 1/4 cup dried coconut and coconut extract.

Let pudding set up in refridgerator for 10 minutes, the longer the better.

When pudding is well set, gently fold in all the Cool Whip until a uniform color without white. Use less Cool Whip for a more intense chocolate taste and heavier consistancy.

Stir in remaining coconut.

Serve, garnish with more dried coconut if desired.

Notes:
Even people who are not on low carb diets, or any diet for that matter, like this dessert. The coconut can be left out for plain chocolate mousse, it's great too. The flavor of mousse can be changed to any flavor available in sugar free pudding. Butterscotch mousse is another great choice.

Serves about 4 -5.
