Winter Weather Goulash

This simple goulash recipe is wonderful on a cold day. It is filling and warms you up from the inside out.

Serves: 6-8

Ingredients:

2 pounds ground beef
1 large onion, chopped
1 clove garlic, minced
2 (15 ounce)cans tomato sauce
2 (14.5 ounce) cans diced tomatoes
2 tablespoon dried Italian seasoning
1 Bay leaf
3 tablespoon soy sauce
2 tablespoon Worcestershire sauce
2 tablespoon ketchup
Salt and Pepper to taste
3 cups water
2 cups uncooked elbow macaroni
Shredded Cheddar Cheese, optional

Directions:

1. In a large Dutch oven or stew pot, brown ground beef over medium-high heat, breaking the meat up into small pieces as it cooks. Once the meat is no longer pink, approximately 10 minutes, drain or skim off the fat. Place cooked ground beef back into the pot and add garlic and onion. Cook the mixture while stirring until the onions are translucent, about 8-10 minutes.

2. Stir in water, tomato sauce, diced tomatoes, soy sauce, Worcestershire sauce, bay leaf, Italian seasoning, ketchup, salt and pepper and bring to a boil. Reduce heat to low, cover and simmer 15-20 minutes, stirring occasionally.

3. Stir in uncooked macaroni, cover and simmer over low heat 20 minutes or until the pasta is tender, stirring occasionally. Remove from heat, remove bay leaf, top with shredded cheddar if desired.

NOTES: Need to run an errand? This recipe tastes great from the crock pot! Turn the empty crock pot to high. Brown the ground beef, drain the fat. Then put all ingredients, including the browned meat into the slow cooker. Stir, cover and heat on high for 1 hour or low for 3 hours or until the pasta is tender.

You can also add a small bag of frozen mixed vegetables if you want to add a little something extra.
