  • 1 1/2 pound navy beans, soaked overnight in cold water and then drained
  • 2 1/2 quarts water
  • 1 ham hock or meaty ham bone
  • 1 cup chopped onion
  • salt and pepper, to taste

Combine the soaked beans with the water, ham hock, onion, and seasoning as desired.

Cover the crock pot and cook on low heat for 10 hours or until the beans are cooked.

Remove the ham hock from the crock pot and pick the meat from the bone. Discard the bone and chop the ham into bits. Return to the crock pot.

Adjust seasoning as needed before serving.
