1/2 c. water
1/8 tsp salt
Dash nutmeg
2 Tbsp butter
1/2 c. flour
2 eggs
1/3 c. shredded Swiss cheese
1 c. sliced almonds
Oil for deep frying
Place water, salt, nutmeg and butter in pan. Bring mixture to a full rolling boil over high heat. Add flour all at once. Remove from heat. Stir until mixture forms ball and leaves sides of pan. Beat in eggs, one at a time, until mixture is smooth & shiny. Add cheese & stir until blended. Drop mixture by teaspoons into almonds in pan. Roll to coat & shape into balls. Let stand 10-15 minutes. Heat oil to 370. Fry balls until golden on all sides. Drain on paper towels.
