1 c. flour
1 c. firmly packed brown sugar
1 tsp cinnamon
1/2 tsp salt
1/2 tsp baking soda
1/2 c. sour cream
1 tsp vanilla
1 egg
16 oz can (1 1/2c.) well drained peach slices
1/2 c. chopped nuts
1/2 c. coconut
2 Tbsp soft butter

Lightly spoon flour into measuring cup; level off. Combine flour, 2/3 c. brown sugar, cinnamon, salt and soda. Stir in sour cream, vanilla and egg. Blend at low speed until moistened. Beat 1 minute at medium speed. Pour into 8 or 9" square pan, generously greased on bottom only. Place peaches evenly over batter. Combine 1/3 c. brown sugar, nuts, coconut & butter in small bowl until crumbly. Sprinkle evenly over batter. Bake at 375 for 35-45 minutes until topping is golden brown. Cool 30 minutes before serving. Cut into squares. Serve warm with whipped cream or ice cream if desired.
