Ingredients:
1 cup watermelon juice (recommend Dole's Watermelon Sensation)
1/2 cup orange juice
1 ounce lime simple syrup*
Chilled Proseco
4 capfuls Grenadine Syrup
Preparation:
In a small pitcher mix together watermelon and orange juices and simple syrup.
Put four ice cubes in each champaign glass and add 2 1/2 ounces of drink. Pour Proseco in and gently mix with stir stick.
Right before serving carefully pour a capful of Grenadine Syrup into drink and serve.
* For the lime simple syrup put 1 cup sugar, 1/2 cup water and 1/2 cup freshly squeezed lime juice in a small sauce pan. Cook, stirring until sugar is dissolved. Remove from heat and cool. I store my simple syrups in squeezy bottles in the fridge.
Cooks Notes: I was so excited to find watermelon juice in the store. The watermelon taste really comes through in this cocktail. After you put the grenadine in it, it looks just like the sunset off Sunset Pier in Key West Florida.
