Brisket Burgers with Bourbon Pepper Relish

Ingredients

Burgers
1 1/4 pounds ground brisket
2 small red onions (grated)
3 large garlic cloves (grated)
2 T german mustard
1/4 cup fresh cilantro (chopped)
1/2 t kosher salt
1/4 t freshly ground pepper
4 slices thick american cheese
4 crusty rolls (like ciabatta)
Crisp lettuce (like romaine)

Relish
2 T Light flavored olive oil
2 cups multi colored (orange, yellow, red and green) bell peppers very finely chopped
2 T fresh thyme (chopped)
1/3 cup Southern Comfort (or other bourbon)
pinch kosher salt
pinch freshly ground black pepper

Directions

Put ground brisket in large bowl. Grate garlic on microplane directly over meat, then on a onion grater or a cheese grater do the same with the onions. Add mustard, cilantro, salt and pepper. Mix to combine. Do not over mix. Wrap in plastic wrap and put in refrigerator to marry.

For relish - In a small skillet over med-high heat add olive oil, and chopped bell peppers. Sautee till slightly softened (not mush) about 4-5 minutes. Add thyme and southern comfort. Turn heat to med-low and reduce till liquid is gone. Set aside to cool.

Remove burger mixture from fridge and divide into 4 patties. For best results cook on charcoal grill. Whether cooking inside or outside, for medium-rare cook 4 minutes each side; 5 minutes each side for medium and 6 minutes each side for well done. During the last minute of cooking place thick cut american cheese slice on each burger.

Spread mayo on one side of bun and german mustard on the other. Place burger on bottom. Spoon relish on top of cheese and lay crisp lettuce (like romaine) on top and then the other bun.

Cooks Notes - I really hope you enjoy this different kind of burger. Using brisket for your burgers gives it a richer taste and a slightly different texture. I have often seen mushrooms and white or marsalla wine, but don't like the dull brown color. I was at the grocery store and saw this beautiful package of fresh cut 4 color bell peppers and thought wow, if I could keep the colors this would look great on top of a burger. The pairing of Southern Comfort and the thyme turned out to be a real bonus.
