Ready in: 30-60 minutes
- 1/2 cup brown sugar, packed
- 1/4 cup butter or margarine
- 1 tablespoon brandy or orange juice
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon ground cloves
- 1/8 teaspoon ground ginger
- non-stick cooking spray
- 4 bananas, peeled halved crosswise quartered lengthwise
- 1/4 cup pecan halves or almonds
- vanilla ice cream or frozen yogurt
In a saucepan, combine the brown sugar, butter, brandy and spices. Heat and stir until combined. Keep warm. Spray an 8- x 8- x 2-inch baking dish with nonstick coating. Add bananas and pecans. Top with the spiced sauce. Bake, uncovered, in a 350 degrees F oven 12 to 15 minutes or until heated through. Or micro-cook, covered, on 100% power (high) 3 minutes, stirring gently once.
