Ham and Cheese Breakfast Casserole

12 ounces cheddar cheese, shredded
12 ounces mozzarella cheese, shredded
1/2 cup sliced green onions
1/2 cup chopped red bell pepper
4 ounces fresh mushrooms, sliced
1/4 to 1/2 cup melted butter
8 to 12 ounces chopped cooked ham
1/2 cup flour
1 to 2 cups milk
8 to 10 eggs, beaten
2 tablespoons snipped parsley

Toss the cheddar cheese and mozzarella cheese together. Spread half the mixture in a 10 by 15 inch baking dish sprayed with nonstick cooking spray. Sauté the green onions, red pepper and mushrooms in the butter in a skillet. Stir in the ham. Sprinkle over the cheese in the baking dish. Top with the remaining cheese.

Beat the flour, milk, eggs and parsley in a bowl. Pour over the cheese. Bake at 350 degrees for 35 to 45 minutes or until the center is set and the top is slightly browned.
Yields 10 to 12 servings.
