Parmesan Onion Rings with Dipping Sauce

vegetable oil for frying
1 1/2 cups flour
2 tsps. baking powder
1 1/2 tsps. seasoned salt
3/4 cup freshly grated Parmigiano-Reggiano cheese
1 1/2 cups milk
2 tbsps. vegetable oil
1 large egg, separated
2 large yellow onions, sliced to 1/4 inch thickness
1 recipe Roasted Red Pepper Dipping Sauce, recipe follows

In large kettle, pour oil to a depth of 4 inches. Heat to 360 degrees.

In large bowl, mix flour, baking powder, seasoned salt and cheese. In another bowl, mix milk, 2 tbsps. vegetable oil and egg yolk. Add milk mixture to flour mixture, whisking to mix.

In another small bowl, beat egg white at high speed with mixer until soft peaks form. Add egg whit to flour mixture, stirring until smooth. In batches, dip slices onions into batter. Drain slightly and fry in batches, 2 to 3 minutes or until golden brown. Serve with Roasted Red Pepper Dipping Sauce.
Serves 4.

Roasted Red Pepper Dipping Sauce:
1 1 oz. jar roasted red peppers, well drained
1/2 cup sour cream
1/2 cup mayonnaise
1/2 tsp. seasoned salt
1/4 tsp. ground black pepper
1/4 tsp. garlic powder
1/4 tsp. ground red pepper

In work bowl of food processor, mix roasted red peppers, sour cream, mayonnaise, seasoned salt, pepper, garlic, powder and ground red pepper. Process until smooth.
Cover and chill.
Yields about 1 1/2 cups.
