Onion Blossom Spicy Dipping Sauce

1/2 c mayo
1 T prepared horseradish
2 t white distilled vinegar
1 t water
1 t paprika
1 t ketchup
1/4 t black pepper
1/8 t oregano
1/8 t cayenne
1 dash garlic powder
1 dash onion powder
5 c shortening, as required by the fryer
1 large white onion
Batter: 1/2 c flour
1/2 c bread crumbs
1/2 t salt
1/2 t ground black pepper
1 1/2 c milk

Combine ingredients in a bowl with a whisk until creamy.
Cover and chill the sauce.
Heat shortening to 350F in deep pan.
Slice the stem end and the root end off onion.
Rest onion on a flat side, cut down through it, slicing it in half.
Slice each half 4 to 5 more times in a spoke fashion to create wedges.
Separate the onion pieces.
Create batter by combining all dry ingredients in a bowl.
Whisk in milk until batter is smooth; let batter sit 5 min. (It will thicken.)
Whisk batter again.
When oil is hot dip each onion piece in batter, let batter drip off, drop into hot oil.
Repeat, frying 8-12 at a time 1-2 min.
Drain on a rack or paper towels.
