Tequila Swordfish Steaks

Marinade:
3/4 cup fresh orange juice
1/3 cup tequila
2 tablespoons olive oil
2 tablespoons light brown sugar
2 tablespoons fresh lime juice
2 teaspoons ground cumin
1/2 teaspoon grated lime rind
1/2 teaspoon grated orange rind
1/4 teaspoon cayenne pepper
1 small clove garlic, minced
salt to taste

4 swordfish steaks, about 6 ounces each and 1 inch thick

Mix together orange juice, tequila, olive oil, brown sugar, lime juice, cumin, lime rind, orange rind, cayenne, garlic and salt in small bowl until well-blended.

Place the swordfish steaks in shallow glass baking dish and evenly brush the marinade over both sides. Cover the steaks with plastic wrap and refrigerate for 30 to 60 minutes.

Grill swordfish steaks over medium heat until fish is opaque in center but still juicy, about 10 to 12 minutes, turning once. Baste with marinade during cooking.
Yields 4 servings.
