Italy-Radicchio Salad

1 tbsp. capers
juice of 1/2 lemon
1/4 cup extra-virgin olive oil
8 sprigs Italian parsley
4 salted anchovy filets
1/2 clove garlic
1 head red radicchio, washed and dried
1 head green radicchio or 1/2 head oak leaf lettuce, washed and dried

In a blender, combine the capers, lemon juice, olive oil, and parsley
until smooth. Rinse the anchovy filets under cool water, debone them, and mince them with the garlic.

Slice the red and green radicchio into strips, toss with the minced anchovy mixture and dressing, and serve immediately.
Serves 4.
