Spicy Asian Peanut Sauce

- 2 2/3 tablespoons soy sauce
- 2 2/3 tablespoons unseasoned rice vinegar
- 1/4 cup cold water
- 2 tablespoons sugar
- 1/4 teaspoon salt
- 1 1/2 teaspoon minced fresh ginger root
- 1 teaspoon minced garlic
- 1/4 cup ground roasted peanuts
- 2 tablespoons peanut oil
- 2 tablespoons sesame oil
- 2 tablespoons hot chili oil, or to taste
Combine the soy sauce, rice vinegar, water, sugar, salt, ginger, and garlic in a blender. Process on high speed for 1 minutes. Add the ground peanuts to the blender and process for another minute. With the blender running on low speed, slowly add the oils through the feed hole. Use the sauce immediately.
