Spanish Hot Dogs and Rice

- 2 cups instant rice
- 2 cups water
- 1/2 pound hot dogs
- 3/4 cup diced green bell pepper
- 3/4 cup diced onion
- 1 can stewed tomatoes, undrained
Bring the water to a boil in a saucepan over medium-high heat. Stir in the rice, bring to a boil again, then reduce the temperature to a simmer. Cover and cook for 5-7 minutes until the water is mostly absorbed, then turn off the heat and let the rice sit, covered, until all the water has been absorbed. Meanwhile, slice the hot dogs into 1/2-inch rounds. Fluff the cooked rice with a fork then stir in the hot dogs, green pepper, onion, and stewed tomatoes. Place the saucepan over medium heat and cook, stirring gently, until all is heated through. Serve hot.
