Best Asian Style Ribs Ever

- 2 full racks baby back pork ribs
- 3/4 cup hoisin sauce
- 1 ounce fresh ginger, peeled and finely chopped
- 4 ounces maraschino cherries
- 1/2 cup rice wine vinegar
- 4 scallions, green parts only, chopped
Have on hand a 5-to 7-quart slow cooker. Cut the racks into 3 ribs each and place them in the slow cooker. Cover with hoisin sauce, ginger, cherries, and rice vinegar. Add enough water to just cover the ribs. Cook on high for 5 to 6 hours or until the ribs are tender. Sprinkle with scallions.
