Robert Wagner's Pasta Ala Vodka

Prepared on the show by Robert Wagner - 11/4/04

Ingredients

1 pound spaghetti, cooked per package instructions
28 oz chopped tomatoes in their juice, not strained
1 stick butter
1 cup heavy cream
a bunch of fresh chopped basil
1 cup of good vodka
1 tablespoon hot dried pepper

Instructions

- Steep vodka and pepper for several hours in a pan
- Heat a large sauté pan
- Add tomatoes and lower to medium heat
- Reduce about 5 minutes
- Add butter and let bubble up
- Strain vodka and add to tomato mixture
- After it bubbles up, take off heat and cool
- Gradually stir in basil and then cream
- Serve over hot cooked pasta and top with Parmesan cheese
