Creamed Chipped Beef on Toast

- 1 jar (5 ounce size) dried chipped beef
- 2 tablespoons butter
- 1/2 onion, finely diced
- 2 tablespoons all-purpose flour
- 2 cups milk
- salt and pepper, to taste
- 4 slices toasted bread
Place the dried beef in a saucepan. Add enough cold water to cover the beef. Bring the water to a boil then immediately drain off the water and let the beef cool. Add the butter to a large saucepan over medium heat. Add the onion and cook, stirring frequently, until the onions are translucent. Stir the flour into the butter, mixing constantly until smooth. Continue to stir until the flour mixture starts to bubble. While continually stirring, very slowly add the milk, mixing well until smooth and thick. Chop the cooled beef into small pieces and add to the sauce. Mix well and heat through. Season to taste with salt and pepper. Serve the creamed beef over toast.
