Boudin Stuffed Jalapenos

- 12 fresh jalapenos
- seasoned salt
- 1 link boudin (Lousiana rice sausage)
- 12 slices raw bacon
- toothpicks, as needed
Preheat the oven to 350 degrees F. Slice the jalapenos in half lengthwise. Carefully scrape out the seeds and white membrane. Lightly salt the insides of the jalapenos. Remove the casing from the boudin and crumble the meat. Stuff each jalapeno with the boudin. Wrap each jalapeno half with a half-slice of bacon, securing the ends with toothpicks as needed. Place the jalapenos on a baking sheet and place in the oven. Bake at 350 degrees F for 45 minutes or until the jalapenos are soft and the boudin is heated through. The jalapenos can also be grilled. Remove the stuffed jalapenos from the oven and serve hot.
