Serves 4

2 Tbsp margarine, melted
3 Tbsp flour
1 cup low fat milk
4 eggs, separated
1 (7 oz) can water pack tune, drained
1/4 cup shredded cheddar cheese
1 (10 oz) pkg frozen chopped broccoli, thawed
3 green onions, chopped
1 Tbsp mustard
1/4 tsp hot pepper sauce

Blend margarine and flour in saucepan. Stir in milk gradually. Cook until thickened, stirring constantly. Cool slightly. Add egg yolks, tuna, cheese, broccoli, green onions, mustard, hot sauce and salt to taste; mix well. Fold into stiffly beaten egg whites. Spoon into 6 cup souffle dish. Bake at 350 F for 45 minutes or until brown and firm.
