Serves 2

1 tsp cooking oil
1 cup small broccoli florets
1 cup sliced fresh white mushrooms
3 cups fresh bean sprouts
8 oz can of sliced water chestnuts, drained and chopped
1/2 cup grated peeled carrot
2 Tbsp sweet and sour sauce
1 Tbsp sliced green onion

Heat the cooking oil in the frying pan on medium high for 2 minutes. Add the broccoli and mushrooms. Cook for about 2 minutes, stirring often, until the vegetables start to soften.
Add the bean sprouts, water chestnuts and carrot. Cook for about 2 minutes, stirring often, until hot.
Add the sauce. Stir until the vegetables are coated. Sprinkle with the green onion.
