Serves 6

3-4 Texas Red Grapefruits; halved
1/2 cup tomato paste
1/2 cup ketchup
1 Tbsp cornstarch
1/4 tsp liquid hot pepper sauce
12 beef rib bones (about 3 lbs)
2 eggs, lightly beaten
salt
pepper
1 cup fine fresh bread crumbs
1/4 cup melted butter or margarine

First, prepare ketchup; juice enough grapefruit to make 2 cups. Pour juice into saucepan along with tomato sauce. Bring to a boil, stirring constantly; cook 2-3 minutes. Keep warm.
Dip ribs in beaten egg; then roll in seasoned crumbs. Arrange on foil covered broiler pan. Drizzle butter over ribs.
Broil 4-6" from heat until crisp and brown (about 10 minutes), turning frequently and basting with drippings. Serve with warm grapefruit ketchup as dip.
