1 Tbsp. vegetable oil
1 medium red bell pepper, chopped
1 Tbsp. chili powder
1 jar (1 lb. 10 oz.) Ragu Light Pasta Sauce
1 can (14 oz.) red kidney beans, rinsed and drained
1/3 cup water
1 can (4 oz.) chopped green chilies, drained (optional)
1 tsp. salt
1 box (16 oz.) penne rigate or Mostaccioli pasta, cooked and drained
1/2 cup shredded regular or low fat Monterrey Jack cheese (about 2 oz.)
In 3-quart saucepan, heat oil over medium heat and cook red pepper with chili powder, stirring occasionally, 5 minutes or until pepper is tender. Stir in Pasta Sauce, kidney beans, water, chilies and salt. Bring to a boil over high heat. Reduce heat to low and simmer, stirring occasionally, 15 minutes. To serve, spoon sauce over hot pasta and sprinkle with cheese.
